Thanks for the patch! I was curious and took a look at https://github.com/elementary/calendar but I couldn't find such an option, in fact it doesn't include a call to gtk-update-icon-cache at all. But that doesn't really matter.
Many existing elementary packages already have such option, e.g. agenda. Some distros (gentoo based) allow to do all installation process in sandbox.
