It's hard to say exactly what's causing the issue. I would try a fresh install of CrossOver and see if that helps.
It's hard to spot but you probably got a desktop notification telling out that macos was preventing terminal from modifying applications. If you go into Settings -> Privacy & Security -> App Managment you should be able to enable terminal. I'd recommend running the script, and then disabling terminal in App Management.
I believe I followed all steps correctly on @NeumaticGore I think you want your first directory for crossover.app not to be
downloads
/users/mohnishpothineni/Downloads/Crossover.app
Should be
/users/mohnishpothineni/Applications/Crossover.app
But I'm not sure if that is the problem for you,
I believe I also get the same error you did after running it over again after already installing successfully:

Because despite the error I still got the option shown above I must've done it right the first time (you'll notice I also got Crossover going in a second bottle... so I may have to reinstall and just try again
Because my issue right now im still dropping a lot of frames and I don't see any "DXVK message in the bottom left corner while DXVK loads. so I'm going to try to the fresh install again later I guess"
is there a step we're missing does this toggle being on help? did we have to manually place any patch files into the Crossover directories or is there indication of a new directory and files that appear upon successful installation?
Or should we be launching Battle.net bottle first or something then Overwatch 2 bottle for anyone running successfully have advice on getting it to work right?
I had the same issue and realized that even though it would ask for it, the patch didn't save the custom Crossover installation directory. I put out a fix for it here as a Pull Request: https://github.com/Marqasa/overwatch-crossover-patch/pull/29. This worked for me to install Overwatch 2.
If you're technically inclined, you can build it yourself now instead of waiting for a new release:

why is this issue still open? Run Crossover unoptimized is the only option imo, is there still another issue with booting? Or after launch? OP @NeumaticGore ? ty
