MUI supports ThemeProviders. One interesting theme is paperbase (https://material-ui.com/premium-themes/paperbase/) -- would be interesting to connect it up as a ThemeProvider.
Even if we don't love this theme, the exercise of connecting up some theme will make it easier to change going forward.
