We may as well use this PR together to clean up the README.

Once we agree it's good, I can produce a PDF (using a python tool that uses flask to serve the github markdown).

Hold your 🐴s! Don't you think we should fix this up more before approval/merge? I think the controls sections is way outdated, needs updating.
