Good question! Do you mean as a background? Aesthetically, be careful... As long as the image doesn't overtake your text, absolutely! I do this a lot myself, actually.
Logos often have graphical text (an image), but your site title, like Around the World in 80 Days: An Excerpt should be true text. That is, text that is actually typed by you, and not an image for accessibility reasons. So if you were meaning can you type a title in Photoshop and export it as a header image, I'd prefer not. It's generally considered poor practice.
