Build is failing targeting .net 6 #8

I'm putting this here as an acknowledgement. The build is currently failing on GitHub. This seems to be because GitHub can't build .Net 6 projects just yet. Hopefully that gets resolved soon.

Re-targeted test projects to .Net 5 for now.
