I had a draft going for this from when I added the table in the first place, I think this is cleaned up enough now to add.

Managed maintainers as a yaml file
Script to auto generate the markdown tables for the README
Contributor guide for running script
I put Meltano as the maintainer for all that were set as "Looking for maintainers"
