Document output format #66

Currently there is no documentation on the format of the output CSV files produced by the XBT code, both classifications and metrics. This should be documented on one or more wiki pages.

I have created a new wiki page for the files associated with the XBT experiments: https://github.com/MetOffice/XBTs_classification/wiki/XBT-data-formats

and also a PR #77, to add a readme to the experiment files directory.
