This PR removes the mock files for the metabolomics data overlay. Also, it removes the version from the model file names (renaming the files), and lastly it updates Human-GEM to the latest 1.10.0.

This was an unplanned Human-GEM upgrade, quite straightforward to do.

Adding a note here that we should create an issue for removing transcriptomics mock data for Yeast GEM.
