https://docs.microsoft.com/en-us/power-bi/connect-data/power-bi-data-sources This documentation page shows that it's also possible to connect to many data sources using a Data Gateway, incl. Azure Data Lake Storage Gen2 & Azure SQL Data Warehouse. The SQL Serverless Pool is not mentioned, but I'm not sure whether there is currently a way to create a private endpoint to it in your own vNet, is there?

We have a plan to remove the limitation (1 per workspace). On the Power BI, the document, should be updated. It's not current.

According to this documentation page, it's currently possible to link only a single Power BI workspace to an Azure Synapse Workspace.
Is it planned on the Microsoft roadmap to remove this limitation? Could you provide an estimated timeline?
Is there an alternative, e.g. by connecting to the data sources using a Power BI Data Gateway deployed in a vNet with private endpoints to the corresponding PaaS resources (to protect against data exfiltration)?
