Changing Defender 365 to Defender XDR to reflect portal changes

Replace issue name M00-LAB00:QUICK_DESCRIPTION, for example "M01-LAB01: My new issue" (or same name as linked Issue)

Did you ever merge this?

There are other pull requests on this course, it would be nice if the course maintainer is on-top of this.

I can take ownership as I teach this course on a regular basis if there is a path to do that, please let me know the contact details of who to talk to about it.
