Instructions don't include creating the composed model

In the instructions for lab 3 https://github.com/MicrosoftLearning/mslearn-ai-document-intelligence/blob/main/Instructions/Exercises/03-composed-model.md it is explained how to create and train two custom models.

However, after training the 1099 Forms custom model, we should be using the "compose" button to create the composed model that includes both custom models. These steps are no longer included in the lab instructions.
