It may be time to learn LaTeX.
For LaTeX I can recommend the Gummi editor as an easy entry point and TexStudio for some of the more advanced stuff once you convinced yourself that LaTeX is way more awesome than M$ Word.
Overleaf.com is also good

I have been using EuroPass for the version which is tailored per-business/position, but lately it has only been trouble more than it's worth, so I need to figure out a better option.

- doesn't look pretty and people who don't know don't see the skill involved in markdown and converting it to pdf
