chore: Cleanup example and improve GitHub CI

Description :memo:

Purpose: Ensure the example builds without problems
Approach: Fix Android build and implement CI jobs for all platforms

Type of change

[x] Bug fix (non-breaking change which fixes an issue)

Updates

Update versions and tooling in Android example project.
Added jobs to GitHub CI to build the example targetting: Android, iOS, macOS, and Linux.

Test plan :test_tube:

Android app built locally.
GitHub jobs passing
