Troubleshoot CPACK Installer

Currently the generated CPACK installer does not work on it's own. After installation, if you try to run the Autonomy_Software program, it exits stating that it can't find dynamically linked libraries.

• [ ] Ensure all libraries are statically linked to the generated CPACK installer.
• [ ] Run the installed/extract executable and ensure that all other external or include files are properly included
• [ ] Check if things like models and other data need to be included in the installer.

This could be difficult and might require messing with the project library packages, the docker image, and the project's CMakeLists.txt

Moving to URC 2025 - Sprint 1, we won't be creating any major releases until closer to URC so this will give more time to figure out what's going on.
