Why did you decide not to post your log?
Volume was reset when playing 'Download/WEB/24-44/nthng/(2017) It Never Ends/3 - It Never Ends.flac'. The previous track was 16 bit.
I've tried it on Ubuntu with the latest stable release with a pure PulseAudio setup and the volume does not reset.
I just noticed that stopping playback and starting it again also resets the volume to 100%. Pausing works fine.
Could you attempt to reproduce this with #1480? I was fixing a different bug that I was reported directly (MPD crashing if volume is set before anything is played on the PW output), but I stumbled across volume getting reset too.

It does still reset the volume when stopping and starting playback, though.
I can't reproduce the your new problem with 0.23.7. Since this is a different problem, and your original problem was solved, please open a new bug report for that (if you can reproduce it with 0.23.8 to be released today).

I'm on Arch Linux using mpd 0.23.5 from the main repos and I'm playing FLAC files. One compilation in my collection has files with different sampling-rates and bit-depth. Whenever the song changes and the next one has a different bit-depth or sampling-rate the playback volume is reset to 100%
This happens with both the PipeWire and the PulseAudio backend, though the PulseAudio server is actually PipeWire-Pulse, so I can't say whether it happens when using pure PulseAudio.
