Documentation and Configuration Updates #77

This PR includes cleanup of unused dependencies/package configuration and rework of the README to remove unnecessary clutter and update key information to match all the recent changes. I hope to supplement the README with some auto-generated docs in the future, but I think that hand-maintaining an index of all the commands was unsustainable.

Looks like we can't use dependency groups for older Python versions....going to revert I guess.
