Opening PR which isolates gatsby v5 dependency work. Addresses #524 at closing and is a rollback of Slices API activity in #562 and #535

Hey @Tammo-Feldmann I got blocked here with E2E testing. Again local environment passes tests, but Playwright CI does not! My apologies in advance for the headache.
