How-Tos hackday reorg #181

Progress together with @andypbarrett @mjami00 @ScienceCat18 @cassienickles @jules32 and others.

We've reorg'd the _quarto.yml file together so it's looking as we'd like it and added a lot of notes of TODOs to make this happen in practice and tidy up/rename/delete files.

The overall idea is for the left navbar to be short and streamlined, with few chapters. Each chapter will then have headers that will let the user navigate nicely on the right navbar. Here's an action shot of the process!

OK I've taken care of all of these check-listed items in #182, and merged. The side navbar currently look like so; we can review and continue tomorrow. I've noted next steps in the check-list in a new issue #185
