Posted this problem to the Servers Check forum and got a response that someone else had the same problem that they solved by reverting the firmware from V8 to V7.5. Will try that now.
The temperature response is better but does not match a simple calculation I found online.
Just tested moving the sensor from the wood platform that Scott had to the metal floor of the container (Oct. 23, 2019 at ~15:30 UTC on MPD 2). The temperature dropped (also because I moved it away from the computer fans) but the dew point is not going crazy. Seems like mounting to metal is okay...just need to do so.
Sensor is mounted to MPD2's metal frame and seems to be giving reasonable results. The dew point is still a bit weird but the relative humidity seems reasonable. I will mark this as resolved for now more or less because we don't use that number and it is irrelevant to our operations.
The dew point temperature is reporting higher than the actual temperature when the humidity raises. That can not be right.
