Updates to Text Analysis lesson

• Do an intro of tokens and all the important text analysis vocabulary
• Exercise 1: Try out the workflow with PDF
• Next step, look into str_ functions and what you can do with strings in R, introduce regex (See Casey's str_tutorial.qmd)
• Practice str_functions
• Finally, introduce how to recreate a PDF table into R (See Casey's materials)
• Do a walk though example (live coding)
• Do a sentient analysis and how to plot it! (Owrdcloudd and log bars) See Casey's examples
• Finally, talk about the power of text analysis and how it can easily get complex and lead to LLM models and all that

Note: Mention that there are different ways of "loading" text data; PDF is one, and csv with text is another. Maybe show these two in each example.
