Training dataset workflow #4

Hi @carmengg ,

I finished updating our workflow for the training dataset creation. I thought it would be better to already merge this before tackling the main scripts.

The main changes are based on path updates and checking that the necessary folders already exist (and create them accordingly).

I have updated it with the main branch before the PR, so hopefully this should merge.
