Expose option when writing ESMF weight files using ESMPy to use verbose weight file output. See comment thread (https://github.com/ESCOMP/CTSM/pull/815#discussion_r358440519) for discussion. The current write option in ESMPy uses the concurrent weight file write which does not output grid metadata.
