Add Image directory to R subfolder and create README #18

Add "imgs" directory to R subfolder. Place images in this folder that will be embedded in Markdown files created in the R subfolder.

Should we standardize the images folder name? We already have Tableau/Images. I'm inclined to go with R/images for better human readability?

Absolutely, I agree. I always have a subfolder in my projects called 'imgs' so I defaulted to that. If no one has substantial objections, I'll update the folder to be "images".
