Restructure Datasheet JSON based on categories #2

In Outputs/datasheet.json have three categories associated with 1) Data Source 2) Data 3) Reuse

In this restructure, should we incorporate the namespaces you mentioned in the previous issue? i.e: new are the new concepts developed for this work dpv are the concepts from https://w3id.org/dpv gdpr are the concepts from https://w3id.org/dpv/dpv-gdpr dcat are the concepts from https://www.w3.org/TR/vocab-dcat-3/

Hi - good progress, we're getting there. For namespaces, also add dct as https://www.dublincore.org/specifications/dublin-core/dcmi-terms

Noted and done ✅ . I've added dct in the datasheet JSON.
