CI: use collection-2020-2.0rc7-1 conda env for online tests #7

@bruceravel, it fixes the failing CI builds as there are new features used in the profile (implemented via #3).

@mrakitin rc7-1 certainly has one failure on my end. Between rc4 and rc7- something in my interaction with my Struck counter became broken. I was planning to look into that today.
