fix/feat: fixed bug mutating opstats object; added yet more details to deployment report #1337

fixed bug mutating opstats object by creating a deeply cloned working copy;

More deployment details: added user/role counts, unique users to operationId counts, date generated, version/commit info, label usage

cleanup: flattened structure of some stat objects, moved code to functions
