Added dbt-core explicitly to requirements as recommended in 1.8.0 upgrade guide

Sqlfluff currently isn't compatible with dbt 1.8.0, given that we don't have a burning need for it yet, i think best to just wait. I'll monitor sqlfluff releases this week
