Michael worked on generating fairy tales a couple years ago, using Vladimir Propp's categorization work. You might take a look at what he did with that. (I've found that with categorizations like Propp's it's really tempting to try to generate the whole breadth of the corpus, while sticking to a couple easy-to-produce variations might result in better output, but YMMV.)

When you're not sure that you'll have enough time - that's when you start creatively cutting corners you previously thought vital. You may be surprised (and disappointed!) with the output, but you might get it done, anyway!
