minor updates suggested by Bryan regarding the COVID cohort definitions.

Here are the few minor updates regarding cohort definitions. @bryanlaraway 's suggestions came in after your merge, @wibeasley.

@stephanieshong, I think I got these last night with these two changes. That's why this PR has some conflicts.

But I'm happy to implement these changes.

• [x] The current version says

  Each COVID-positive patient is matched to roughly two control cohort patients.

  while this PR says

  Each COVID-positive patient is matched to roughly, 1:2 ratio, control cohort patients.

• [x] The current version says

  non-positive COVID labs.

  while this PR says

  non-positive COVID lab tests.

In each pair, which do you prefer? (Or a third option.)
