Hi it would be nice the possibility to switch the icon of the app for one that would be suitable for wink screens

This is already possible:

first you need to apply some suitable icon pack e.g. arcticons light (https://f-droid.org/de/packages/com.donnnno.arcticons.light/) or dark (https://f-droid.org/de/packages/com.donnnno.arcticons/) may work.
second you can change icon for any app that has no custom icon. Just select Custom icon from context menu and use any icon you like.

Another option for Android 13 may be to enable Themed icons, but not all apps already offer monochrome icons.
