As incycledream mentioned, something interesting caught my eye in the 0.9.5 release of OpenCore.

Fixed GUID formatting for legacy NVRAM saving

Maybe this fixes NVRAM and sleep-wake, finally? If anyone is reading this, and want to give it a try, do let the world know if NVRAM and Sleep-Wake is finally fixed :D
