Removes previously removed --ecef argument from the doc pages.

Description

I do not see the --ecef option in the current version when running point2las --help.

Can you check what point2las --help says? Particularly the build date?

I see:

[ASP 3.4.0-alpha] Build date: 2023-11-27

--ecef Save the point cloud in ECEF, rather than with a projection relative to a datum.

This is a recent option, and the latest doc is kept in sync with the latest build.

We also have a stable version of the doc, at https://stereopipeline.readthedocs.io/en/stable/tools/point2las.html, pointing to the doc as it was for the latest official release.

Gahh! I had the 10-15-23 nightly installed. Updated to the 11-22-23 nightly and I see it. Apologies for the noise!
