Remove default values in WAQM data structures #37

Will avoid them reloading when the data store elements are being edited, this is nice for a new record, but creates problems when an existing record is being edited as the default values override the existing null value of a field.

More background: The original intent for using defaults was to provide a guide while doing configuration. The mapping spreadsheet (and other docs) are now the primary guide and do a better job of providing guidance.
