How would you make the exe the grabber makes be undetected by the anti-virus?

There's no way to bypass it Like maybe try to get them to turn off antivirus or something

You can make a special folder from antivirus settings that don't get scanned. "Settings>virus and threat protection>virus and threat protection settings>exclusions" Then click exclusions and add the volder the grabber is in.
