Add type annotations where possible #52

Type annotations should be added where possible. I suspect this will happen across a few PRs rather than just one, but it's worth having an issue to tick it off at the end.

As type annotations start to be included I'd recommend taking full advantage of them by failing the build on the results of mypy.
