You can't compile from your iPad, you have to compile on a Mac and transfer the binary over to your iPad.
What's the point of having a way to install it with jailbreak only if it's not true honestly remove that installation method from the readme then if it doesn't even work

Yes it does. You need to be jailbroken to gain abilities such as SSH and remote filesystem access, not to mention ability to install unsigned binaries on your device.
The entirety of the steps we outlined in option 2a should be done on your Mac via Terminal. Your Mac builds (via Xcode, something else you won't have on your iOS device, hence the error when you run the command via Mobile Terminal), then remotely installs an unsigned binary on your iOS device when you run the outlined command, which is why you must be jailbroken.
At no point in all the outlined steps do we mention installing via Mobile Terminal, nor do we take too kindly to people getting mad at us for their own mistakes. Also, it's _then_, not *than.
