Organized repo more like a monorepo + added vite bundler to plugin #2

I apricate the contribution, however while testing I receive errors and I'm not sure how to fix them as I'm not familiar with vitejs 😂 If I have time after work I'll look into it and fully review your request (as my problem is probably due to the fact I haven't set it up)
