Please update doc site with v2.1.0 #19

Hi @jorgenmk , I see that you did some commits related to doc updates - but the site still shows 2.0.0: https://nordicsemiconductor.github.io/Nordic-Thingy52-FW/documentation/index.html

Maybe a simple deployment step needed?

Hi and thanks for reporting! The doc shows the wrong version number, but the content is up-to-date. Just missed updating a doxygen value when adding release notes for version 2.1.0. Will fix.
