Support patching the OAS 3.1 schemas #6

Currently scripts/patch-schemas.py only supports OAS 30 and assumes a single schema file, and only patches for that file exist. Need to support OAS 3.1 which uses up to 4 schema files IIRC.

Fixed in the m2 branch, specifically ff7a1e6 and d461555
