Updates core to v2.56.0, fixes the numpy deprecation issue in many processors, updates tesseract (superseding #391), tesserocr, opencv and various other fixes/new releases of processors, cf. CHANGELOG.md for the full list.

OK, I can now build all the containers locally, so fingers crossed for the CD.
