Well, it's only adding the new version to two files.

Decisions to be made:
[x] Move images to OFDataCommittee org
[x] Test against the (3) 2 latest **12 OpenFOAM releases
[x] Test against the 2 latest SmartSim versions in terms of MAJOR releases
[x] Test against both keydb and redisAI builds (latest docker images from both branches)
[x] SmartRedis versioning; currently Allwmake will compile latest SmartRedis from develop branch - not sure how this will play with the rest of the build matrix.
