I ran DQD on the dbt-synthea output and made the following fixes as a result

Added empty seed files for the OMOP tables not populated by dbt-synthea at the moment
Fixed some data types and a column name

I also updated requirements.txt with a newer version of dbt, as folks have reported errors installing the project with the current requirements file.
