Remove vestigial project sub-folder

@vvcb FYI I am going to go ahead and merge this in so that folks can get started working on adding stg tables. Since it contains the file structure revamp I'd like this in place before people start adding more code. I also added in a full sample stg model for patients for peoples' reference.

I am still open to discussing conventions further, we can always reorganize things. Between GitHub Copilot and dbt Power User nothing is too tedious anymore ;)
