This seems to be an issue with Big Sur (macOS 11). I updated to Sonoma (macOS 14) and the new OnlyOffice version (8.0.0) now works. But then I tried the old non-working version (7.5.1) and it didn't crash anymore as well.
Yes, the problem with Big Sur. Thank you for telling me that the OnlyOffice is working for you now.
I'm closing it issue until new requests.

Expected Behavior
When opening OnlyOffice, it should start as usual.
Actual Behavior
When opening OnlyOffice, it doesn't open and immediately crashes. When opening it via the search bar, this error window opens after the crash:
(The program ONLYOFFICE cannot be opened. 11)
The problem occurs on versions 7.5.0 and 7.5.1. 7.4.1 works as usual.
