Add multiple profiles to the scripts, so that you can build different versions by changing one line in config.sh #16

Basically, you add a directory to the profile directory in scripts, with a build.sh file, its own config.sh file, the linux and toybox configs, and the welcome.txt.

In the process of testing, I added a "Chonky" profile as well as the Core one. All that's different at the moment is that it is a 28.8k disk image, and has the kilo text editor. Originally, I stuck a different linux config in, but it wasn't booting.

(I'll commit this myself, but felt like doing a pr and merging it.)

Okay, turns out that you can't review your own pr, so I can't merge it. Well, I did want to see if that'd work. Guess it doesn't.
