I first tried saving the logo image in the 'assets' directory but then i couldn't get the logo url path to work from the config file (I was probably doing something really stupid!)
So I just left the logo image in the same location as the config file for now, it works and shows up in the website sidebar, but we should have a special directory for images in the future
