A lot of these have already been done in like 3d modeling or game-wise, but I don't recall seeing them in VR ever? But that's just me
instant realization of a different meaning for "simple and complex puzzle ideas" aha--
From my experience with escape rooms, there's a lot of secret/simple coding--and by that I mean the answers are more obvious than they seem, but the fun is in finding them?

Multiple locks. Multiple locks with different kinds of combinations?
Different colored wires that the player might need to cut. The player could start the game with wire cutters in plain sight, then the wires to cut could be a puzzle near the end. Clues could be scattered around the play area to show which wires to cut.
Possibly a sliding puzzle game to open a safe or container? One of the pieces could be missing and have to be placed in location to make this a multi step puzzle.
Overall, It would seem that puzzles requiring multiple steps are the best as they allow a feeling of accomplishment along the way and seem more thought out. Common ways of doing this could be making a piece of the puzzle hidden initially or giving the player a clue to a puzzle they have not yet discovered.
