dwarftherapist.desktop fixes #327

Version=0.6.5 is incorrect, according to the specification this key contains 
the specification version and so should contain 1.0.

Encoding key is obsolete.

Categories should not contain GNOME because Dwarf Therapist is not an 
"Application based on GNOME libraries".

The patch for this issues is attached.
