Caffiene 3.+ does not support java 8. Added a note to the pom.xml about this. Once we drop support for Java 8, we can make this change.

Fixes dependency issue introduced in #209. I still need to downgrade HikariCP & GriefPrevention but I will only be able to so later today.

Closing this PR and instead introducing PR #211 which uses gradle instead and includes all of the notes from this one.
